Experience in International catering in Asia or UAE.
Serve safe Certificate.
Very good oral and written communication skills in English.
Knowledge of baking and confectionery.
Food handler medical cleared certificate.
Excellent knowledge of HACCP standards.
Ability to work in an international dynamic and multicultural environment.
Understanding of food hygiene food handling and food presentation concepts.
To have experience in catering for large numbers to a high standard.
Can adapt to rapid changes in a positive manner and work to tight deadlines.
The Head Cook is responsible for the planning preparation and presentation of all items and beverages to the required standards of quality in line with AUAF requirements while attaining a high level of customer satisfaction; practice good housekeeping and personnel hygiene health and safety/ food hygiene.
Ensure all work are carried out as per AUAF Food services
Control the food quality presentation and service as per required standards defined by Food Services director.
Liaise with superior to discuss day-to-day operational requirements achievements and improvements and take necessary action accordingly.
Prepare daily requisition for the next day kitchen supplies considering forecasted man- days menu stock in balance in the kitchen and available items in stores. Forward requisition to Food Services Director for approval before storekeeper makes issues.
Check incoming supplies from stores for quality and quantity damage and spoilage.
Refrigerating units are at correct temperature and checked regularly
Ensure that the food is prepared as per the planned menu and in line with the instructions/feedback received from the superiors. Ensure smooth and timely supply of prepared / cooked food to all concerned units.
Ensure the correct storage of goods and that stock rotation procedures are maintained.
Ensure that wastage control measures are in place and are complied with.
Oversee proper handling packaging and storage of foodstuff and ensure the stock rotation procedures are maintained.
Execute additional/special menus/orders agreed between the management and client.
Prepare ‘a la carte’ orders if required contractually or approved by the management.
Overseeing the service line from setup till the end of service.
Perform any other task assigned by supervisor within the scope of the job.
